Chickity China the Chinese Chicken

I think that it is a common stereotype that most college kids eat their fair amount of Ramen noodles. I know I did. Scratch that, still do. I LOVE Ramen noodles!! Not only are they the cheapest meal ever, but I find them delicious. Only the chicken flavor though, beef, shrimp, oriental...those just weird me out. 
This recipe is the perfect way to dress up your Ramen noodles so that you can continue loving them way past the dorm room years.

Chicken Lo Mein

Ingredients
1 tablespoon canola oil
1 tablespoon soy sauce
1 package chicken ramen noodles, with seasoning packet
1 pound boneless, skinless chicken breasts, cut into strips
1 green bell pepper, chopped
1 small onion, sliced
1 carrot, chopped

Directions
In a large skillet, heat the oil, soy sauce, and half the seasoning packet over medium heat. Add the chicken and cook, turning occasionally, until beginning to brown, 2 to 3 minutes.
Add the pepper, onion, and carrot and cook, stirring occasionally, until the vegetables are tender and the chicken is cooked through, 3 to 4 minutes.


Meanwhile, cook the noodles according to the package directions; drain. Toss with the chicken and vegetables.



Seriously delicious. You could serve this to people and they would have no idea you spent next to nothing, which is the kind of recipe I love.

a friend/ex of mine just told me he ate top ramen for a month straight as he was saving up for some ridiculous and unnecessary electronic items that make him happy. that is a LOT of noodles! but they are cheap and tasty!

That looks really good! I always toss in a can of slices waterchestnuts into stir fry dishes. I love them!
