Tuesdays Meal-Fish Packs and Miracle Mashies

Last nights dinner was AMAZING!! I mean, not to toot my own horn or anything, but I did GOOD.
So, toot toot!

So-Fancy Fish Pack
Ingredients: (Per Fish Pack)
6 oz tilapia, or any similar white fish. (I used the frozen fillets)
8 thin Asparagus stalks, tough end removed (There is NO asparagus happening in this house, so I substituted
          some bell pepper and red onion)
2 lemon slices1 tsp. light whipped butter or light buttery spread
1/2 tsp. chopped fresh parsley (I used dried)
1/2 tsp. crushed garlic
1/8 tsp. salt

Directions:
1. Preheat oven to 375°

2. In a small bowl, mix together butter, parsley, garlic, and salt to form a thick paste. Set aside.

3. Lay a large piece of heavy duty foil in front of you. Line up the asparagus side by side (like a raft) in the center of the foil. Lay the fish on top of the asparagus.

4. Spread the butter mixture evenly over the fish, and top with lemon slices. Fold and seal the top and bottem edges of the foil, and then the side edges, to create a well-sealed packet.


5. Place packet on a baking sheet, and cook for about 15 minutes, until asparagus is tender and fish is cooked through.

6. Allow packet to cool for a few minutes, and then cut to realease steam before opening entirely. Arrange fish and asparagus on a plate, and use the lemons as garnish. So Good!!


Loaded Miracle Mashies
Ingredients: (for 1 serving)
3 oz. cubed red potatoes (about 1-2 small potatoes), not peeled
1 1/2 cups chopped cauliflower
1 1/2 Tbsp. fat-free sour cream
1 Tbsp. fat-free non-dairy liquid creamer (I used skim milk instead)
1 slice fat-free American cheese
1 Tbsp. real bacon bits
1 tsp. chopped chives
dash of salt


Directions:
1. Place potatoes and cauliflower in a medium microwave-safe bowl with 2 tbsp. water. Cover and microwave for 6 minutes, until very tender.

2. Once the bowl is cool enough to handle, drain any excess water.

3. Add creamer, sour cream and salt. using a potatoe masher or fork, mash until completly blended.

4. Lay cheese slice over the mixture. Microwave for about 30 seconds, until the cheese has melted.

5. Top with bacon bits and chives. Enjoy!

P.S. Last Fridays throwing-up-at-work incident was NOT morning sickness. My old frenemy Mrs. Flo came to visit today, and it looks like she'll be staying awhile. Bummer.

B) WOW. I am uber impressed with your cooking skills. (I don't cook. Ever.) Those potatoes sound heavenly! And fish.. yumm... Who doesn't love a great piece of fish?!
